More to does on Cape Cod & Greek Style Baked Cod Planki / 4-17-19

So another week has gone by and we have arrived at Easter week and it is late this year. So if you use Easter as a guide to doing your vacation planning you are already behind schedule. So i am going to feed you a few more places to add to your wanna do list. These will cost you a bit some more than others but all are worthy of looking at both for individuals to families. First, have you ever been Kayaking, there are several places on the Cape to rent kayaks and just go out and have a relaxing time to doing tours, if paddle boarding is more your style they have those too. For me with my back I will stick to sitting down and paddling vs standing and trying to balance.
Next: we already covered whale watching, but have you thought of Shark and Seal tours, or an excursion around Monomoy Island? These go out of Chatham mainly, but there are a few others. If that does not float your boat have you thought about a Cape Cod Canal Cruise or tour, There are several places that cruises go out of so please google this for names of places that offer it.
So you have done all these and still can get enough of seeing the Cape, I have something different for you, what about seeing it from the air. Yup from Biplane Rides to enclosed cockpits, from one end of the Cape to the other. Chatham has tours flying out of, Marston Mills is another which is near Mashpee and also out of P’Town (Provincetown to those of you new to the Cape.) Gotta tell you I have not done this, but I have been up in smaller single engine and twin engine planes and I love it. So this is one of those bucket items on my list to do.
Last for this trip is the Real Pirates Museum the Whydah Pirate Museum located at 674 Rt 28 in West Yarmouth you can also find them online at discovderpirates.com, facebook, twitter and instagram. This is the real deal here folks, stuff you will not find anywhere else. And displays that are the kids can really handle (honest they actually encourage it.) They have been featured by National Geographic and other nationally known organizations. Here again this is great for individuals as well as families. Look for advertising cards in the rakes at restaurants and grocery stores as there is a 3 dollar coupon on it. Go, have fun, and get a history lesson while you’re at it.
Well that’s about it for another week of ramblings. Whether you are coming here for vacation or live here, I hope I have given you a few more ideas for what to do around the Cape besides going to the beach, not that there is anything wrong with that, but there is far more to do than a lot of people really realize. So have a great and wonderful especially if you can do it right here on old Cape Cod, and enjoy your Easter and week.
Business report: First up is the Candy Co located at 975 Rt 28 in South Yarmouth or find them on facebook to be sure you know where you are going and their hours. Folks if you have not been, you are missing a Cape Cod institution, a candy icon. they have so much good stuff it’s not funny. Just about all the flavors of Jelly Bellies, home make fudge, tons of what we used to call penny candy, and candy from around the world. Go and buy a little or buy a lot, just in time for Easter what a fun place to go.
Next up Seafood Sams located at 1006 Rt 28, South Yarmouth or find them on facebook, or on the web at http://www.seafoodsamsyarmouth.com. We have already eaten there since they opened back up and seriously 3 of us shared the fried seafood platter for 2 there was that much food. Now if you are a heavy eater, the platter for 1 will be fine, or the platter for 2 for 2. But for lighter eaters there is a lot of food and it is all good. They do have lunch specials and daily specials. This is a great come as you are, family oriented restaurant, there is something for everyone.
Last place up for this week is Cape House Shop located at Skaket Corners, 9 West Rd Ste 10, Orleans or on facebook. They are more than just a card shop, they are a gifts and collectibles shop. they have goods from local artisans, from chocolates to clothing to gifts. The owner is a wonderful local man who is trying to support the local community not only to the high season customers but to the year rounders. I get it, you ask why stop at another store just to get my cards, I can get them at the grocery store. Really? So you want you cards smelling like a meat and cheese tray? Or like it just came out of a fruits and vegetable market? No, and the grocery or drug store is not going to have the selection as what the Cape House Shop is going to have, not to say the gift selection from graduation to marriages to new births, anniversaries, sympathy, get well cards and yes Happy Birthday Cards. And if you have a special need, ask them they may know of something you are not seeing. Also when it comes to Wedding greetings, Birth Announcements, Christening or even Bar Mitzvahs and Bas Mitzvehs. The point is even when it comes to holiday seasons they have party goods to cover it all. So go check out the Cape House Shop in Orleans for more than you ever expected.
Greetings all, first to those in Paris France, and to those of the Catholic faith, my deepest sympathy to you all for your loss of such a magnificent sacred structure, a landmark of the country and continent, an architectural wonder and an artistic masterpiece. May you be guided by the One who the building honored and was a central house of worship for many as you begin the clean up, then through your rebuilding. It took some 300 years to build, 850 it stood, down in just hours but never out or gone completely. It will take time but you will rebuild. Your building, your spiral served in a similar way to the lighthouses that stand around the world. It gives hope, it gives guidance, it gives warning, it gives so much more. May we around the globe support you in your future endeavor.
Now as this is holy week I hope and pray all is going as well as can be expected. The light has been working overtime since we last spoke as the weather has been in the funky zone that likes to produce a lot of fog, and it has along with the rain that has come through. What can I say, that is what we are here for, and that is what we will do. And old Foggy has been belting it out as well. I have been having good reports from those fishermen who have been coming back with decent catches for this time of year. You know the story it can always be better, but let’s look at what we have to work with. I am hearing from the boys at the real station that water craft inspections are going well, but they warn the sooner you can get them done the better it will be. As we get closer to season the more busy it will get. Finally, Easter egg hunt, this Sunday weather permitting, and really it will have to be really hard rain to cancel, but the safety is the first in mind, and second we don’t want it to be miserable out there. So keep an ear open and you and us will use our common sense and go from there. We are hoping and praying it all comes off ok. Remember it does not start till after church times, so early afternoon, and from what I am seeing that will play into our hands. So that is about it and all we need to cover this week. Another reminder that the Lighthouse and station will begin to be open on the weekends from now till middle or so of May. Well until then, have a great and wonderful, especially if you can do it right here on old Cape Cod, and hoping you are making plans to see us this summer.
I love fish and I love to try new things. I will say this recipe is a little more work than I normally like to do but there are the occasions that going the extra step is worth all the time. Especially when you are looking to have another couple over, Sunday dinner (although that’s a fleeting thing now days.) But regardless if you are the main cook or the secondary, we all like to put it on fancy now and then and this is one of those recipes that can just make you shine. So look it over, and note what all here, then go to it. I really don’t think it is as hard as it first looks, so don’t be afraid and remember those that try, eat well, those that don’t, well, miss out on a lot of great food Now on with the show and let’s get this recipe going.

This week’s recipe: Greek Style Baked Cod Planki

2 Tbsp olive oil or salad oil
1 med fennel bulb sliced
1 med onion, thinly sliced
2 med tomatoes thinly sliced
1 lb cod fillets
1 tsp chicken instant bouillon
1/4 tsp coarsely ground black pepper
2 Tbsp butter (that’s 1/4 stick)
1/4 lb Feta cheese crumbled
1/2 cup Mediterranean olives or pitted ripe olives
1 Tbsp minced parsley
Fennel sprigs for garnish

In 12 inch skillet over medium heat in oil cook fennel and onion until tender-crisp, stirring frequently. Preheat oven to 400 degrees F. Line bottom of 12×8 inch baking dish with tomato slices: top with cooked fennel/onion mixture. Place cod fillets on fennel mixture; sprinkle with bouillon and pepper (I would use Old Bay at this point sprinkle lightly). Dot with butter and bake uncovered for 20 minutes or until fish flakes easily when tested with a fork, basting with liquid in baking dish.
To serve, sprinkle Feta cheese, olives and minced parsley over baked cod mixture. Garnish with fennel sprigs. Serves 4. Note this can be easily doubled for larger parties.
